Description

When it comes to comfort food, chili is at the top of the list. But if you’re looking to take your chili game to the next level, this Guinness Chili is a must-try. The deep, malty flavors of Guinness stout add richness and depth, making every bite even more satisfying.


Ingredients

Meat & Beans

  • 2 lbs ground beef (or a mix of beef and pork)
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed

Vegetables & Aromatics

  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 1 jalapeño, finely chopped (optional, for heat)

Tomato Base

  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 tbsp tomato paste

Liquids & Flavor Enhancers

  • 1 bottle (12 oz) Guinness stout
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce

Spices & Seasonings

  • 3 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tbsp cumin
  • 1 tsp oregano
  • ½ tsp cayenne pepper (optional, for extra heat)
  • Salt and black pepper, to taste

For Serving (Optional)

  • Shredded cheddar cheese
  • Sour cream
  • Chopped green onions
  • Crushed tortilla chips
  • Fresh cilantro

Instructions

Step 1: Sauté the Aromatics

  1. Heat a large Dutch oven over medium heat.
  2. Add a little oil, then sauté the onions, bell pepper, and jalapeño until soft (about 5 minutes).
  3. Stir in the garlic and cook for another 30 seconds until fragrant.

Step 2: Brown the Meat

  1. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if needed.

Step 3: Add Spices and Tomato Base

  1. Stir in the chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper.
  2. Add the tomato paste and mix well, letting it cook for a minute to deepen the flavor.

Step 4: Pour in the Guinness & Simmer

  1. Pour in the Guinness stout, scraping the bottom of the pot to deglaze.
  2. Stir in the crushed tomatoes, tomato sauce, Worcestershire sauce, and beef broth.

Step 5: Add Beans & Let It Cook

  1. Mix in the kidney beans and black beans.
  2. Reduce the heat to low and let the chili simmer for at least 1 hour, stirring occasionally.

Step 6: Serve & Enjoy

  1. Taste and adjust seasonings as needed.
  2. Serve hot with cheese, sour cream, and your favorite toppings!

Notes

  • The longer it simmers, the better it tastes! While 1 hour is enough, letting it cook for 2-3 hours deepens the flavors.
  • If the chili is too bitter from the Guinness, add 1-2 teaspoons of brown sugar or a small piece of dark chocolate to balance it out.
  • For thicker chili, let it cook uncovered for the last 20-30 minutes or stir in a bit of masa harina (corn flour) or crushed tortilla chips.
