Description

Delight in these easy-to-make Ground Turkey and Zucchini Fritters that are both healthy and delicious!


Ingredients

Scale
  • 2 medium zucchini shredded
  • 1 lb ground turkey
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt to taste
  • Ground black pepper to taste
  • 2 tbsp avocado oil
  • For the Sauce:
  • ½ cup avocado oil mayonnaise
  • 1 tbsp maple syrup or date paste for Whole30
  • 1 tbsp yellow mustard

Instructions

  1. Shred zucchini, sprinkle with salt, and let stand for 5 minutes. Squeeze out excess moisture using a kitchen towel or paper towels.
  2. In a bowl, mix zucchini, ground turkey, onion powder, garlic powder, salt, and pepper.
  3. Heat avocado oil in a large skillet over medium-high heat. Form small, flat patties using about a heaping tablespoon of the mixture.
  4. Cook each fritter for about 3 minutes per side or until golden brown and cooked through. Drain on paper towels. Repeat with remaining mixture, adding oil as needed.
  5. Prepare the sauce by combining mayo, maple syrup, and mustard in a small bowl. Stir well. Serve fritters with the sauce.

Notes

  • Make sure to squeeze out as much moisture from the zucchini as possible for better texture.
  • You can store leftover fritters in the refrigerator for up to 3 days.
  • These fritters can also be frozen for up to 2 months.
