Delight in these easy-to-make Ground Turkey and Zucchini Fritters that are both healthy and delicious!
Ingredients

- 2 medium zucchini shredded
- 1 lb ground turkey
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt to taste
- Ground black pepper to taste
- 2 tbsp avocado oil
- For the Sauce:
- ½ cup avocado oil mayonnaise
- 1 tbsp maple syrup or date paste for Whole30
- 1 tbsp yellow mustard
Instructions
- Shred zucchini, sprinkle with salt, and let stand for 5 minutes. Squeeze out excess moisture using a kitchen towel or paper towels.
- In a bowl, mix zucchini, ground turkey, onion powder, garlic powder, salt, and pepper.
- Heat avocado oil in a large skillet over medium-high heat. Form small, flat patties using about a heaping tablespoon of the mixture.
- Cook each fritter for about 3 minutes per side or until golden brown and cooked through. Drain on paper towels. Repeat with remaining mixture, adding oil as needed.
- Prepare the sauce by combining mayo, maple syrup, and mustard in a small bowl. Stir well. Serve fritters with the sauce.
Notes
- Make sure to squeeze out as much moisture from the zucchini as possible for better texture.
- You can store leftover fritters in the refrigerator for up to 3 days.
- These fritters can also be frozen for up to 2 months.
