Description
A refreshing and unique salad combining grilled watermelon with vegan feta and fresh herbs, perfect for summer.
Ingredients

- 1 small seedless watermelon, cut into 2.5 cm cubes (approximately 6 cups)
- 1 large English cucumber, diced
- 60 ml fresh mint leaves, torn
- 60 ml fresh basil leaves, torn
- 180 ml vegan feta cheese, crumbled
- 45 ml extra-virgin olive oil
- 15 ml fresh lime juice
- 5 ml agave syrup or maple syrup
- 2.5 ml sea salt
- 1.25 ml freshly ground black pepper
- Zest of 1 lime (optional)
- Flaky sea salt (optional)
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Lightly brush the watermelon cubes with 15 ml of olive oil.
- Grill the watermelon cubes for 2 to 3 minutes per side until charred and caramelized at the edges. Remove from grill and let cool slightly.
- In a large mixing bowl, combine the grilled watermelon, diced cucumber, crumbled vegan feta, mint, and basil.
- In a small bowl, whisk together the remaining olive oil, lime juice, agave syrup, sea salt, and black pepper.
- Pour the dressing over the salad mixture and gently toss until evenly coated.
- Transfer the salad to a serving platter. Garnish with lime zest and a sprinkle of flaky sea salt if desired. Serve immediately.
Notes
- For best results, serve the salad immediately after assembling.
- Feel free to add other vegetables or fruits to the salad for added flavor.
