- 1 pineapple, cored and sliced into rings
- ¼ cup unsalted butter, melted (½ stick)
- 1 tablespoon lime juice (from ½ lime)
- ¼ cup brown sugar
- ¼ teaspoon chili powder
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon kosher salt
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together the melted butter, lime juice, brown sugar, chili powder, cinnamon, and kosher salt.
- Brush each side of the pineapple rings with the butter mixture, ensuring they are evenly coated.
- Place the pineapple rings on the grill and cook for 2–3 minutes on each side, or until grill marks appear and the pineapple is tender and caramelized.
- Remove the pineapple from the grill and serve immediately.
- Optionally, garnish with a sprinkle of additional cinnamon or a drizzle of the remaining butter glaze before serving.
Notes
- Ensure the grill is hot enough to get a good sear on the pineapple.
- You can adjust the amount of chili powder for desired spice level.
- Great to serve with vanilla ice cream as a dessert.
