Description

A sweet and spicy grilled pineapple dish that’s perfect for summer barbecues.


Ingredients

  • 1 pineapple, cored and sliced into rings
  • ¼ cup unsalted butter, melted (½ stick)
  • 1 tablespoon lime juice (from ½ lime)
  • ¼ cup brown sugar
  • ¼ teaspoon chili powder
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon kosher salt

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, whisk together the melted butter, lime juice, brown sugar, chili powder, cinnamon, and kosher salt.
  3. Brush each side of the pineapple rings with the butter mixture, ensuring they are evenly coated.
  4. Place the pineapple rings on the grill and cook for 2–3 minutes on each side, or until grill marks appear and the pineapple is tender and caramelized.
  5. Remove the pineapple from the grill and serve immediately.
  6. Optionally, garnish with a sprinkle of additional cinnamon or a drizzle of the remaining butter glaze before serving.

Notes

  • Ensure the grill is hot enough to get a good sear on the pineapple.
  • You can adjust the amount of chili powder for desired spice level.
