Description

A delicious and creamy grilled cheese made with a cheesy pimento spread, perfect for a comforting meal.


Ingredients

  • ¼ cup mayonnaise
  • 4 Tbsp cream cheese, softened
  • 8 oz sharp cheddar cheese, grated
  • ¼ tsp salt (kosher)
  • ¼ tsp freshly ground black pepper
  • ½ Tbsp lemon juice
  • ¼ cup pimento peppers, finely chopped
  • ½ Tbsp minced fresh chives
  • 8 slices thick-cut rustic bread or Texas toast
  • 3 Tbsp softened unsalted butter
  • ½ tsp kosher salt
  • ¾ tsp Italian seasoning mix

Instructions

  1. In a bowl, stir together mayonnaise, cheddar cheese, cream cheese, pimento peppers, chives, lemon juice, salt, and pepper until smooth and creamy. Cover it up and let it chill in the fridge for at least an hour or up to overnight.
  2. In a smaller bowl, combine softened butter, salt, and Italian seasoning. Stir until everything’s evenly mixed together.
  3. Take each bread slice and spread the butter mixture on one side. Lay four buttered slices face-down on a flat surface and spread about ⅓ cup of the pimento mixture on each. Top with the other four slices, buttered-side up.
  4. Warm up a big skillet over medium heat. Put the assembled sandwiches onto the hot skillet and cook on medium-low for 3-4 minutes until the bottom is golden brown. Flip ’em over and toast the other side until nice and golden too.

Notes

  • For a spicier kick, consider adding some diced jalapeños or hot sauce to the pimento mixture.
  • This dish can be served with a side of pickles or your favorite dipping sauce.
  • Leftover pimento spread can be stored in an airtight container in the fridge for up to a week.
