Grilled Mango Pineapple Chicken

Description

A delicious and flavorful grilled chicken recipe infused with the tropical flavors of mango and pineapple.


Ingredients

  • 1 ½ pounds thin-sliced boneless skinless chicken breasts
  • 8 ounces Island Salsa, or your favorite mango-pineapple salsa
  • ⅓ cup lime juice
  • ¼ cup olive oil
  • ½ teaspoon freshly ground black pepper, or to taste
  • 1 large yellow bell pepper, sliced into 1/2-inch wide strips
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt, or to taste
  • ½ teaspoon freshly ground black pepper, or to taste
  • 4 ounces Island Salsa, or as desired for garnish
  • ½ cup diced mango, thawed and drained
  • ⅓ cup pineapple tidbits, thawed and drained
  • 2 to 4 tablespoons fresh cilantro, optional for garnishing

Instructions

  1. To a large ziptop plastic bag, add the chicken, salsa, lime juice, olive oil, and black pepper. Seal and smoosh to coat the chicken.
  2. Refrigerate the bag for at least 30 minutes, or overnight, to marinate.
  3. Lightly oil the grill grates and preheat the grill to medium-high heat.
  4. Add the peppers to a grill basket, drizzle with olive oil, season with salt and pepper, and toss to coat.
  5. Add the chicken to one side of the grill and the grill basket with peppers to the other side. Discard the marinade.
  6. Grill the chicken for about 4 to 5 minutes on one side with the lid closed, then flip and cook for another 4 to 5 minutes with the lid closed, or until cooked through.
  7. While the chicken cooks, intermittently stir the peppers, cooking until desired tenderness.
  8. Place the grilled chicken on a serving platter. Top each breast with additional salsa, mango, and pineapple, and optionally sprinkle with cilantro. Serve immediately.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Use fresh or frozen ingredients as available; just ensure they are thawed and drained if using frozen.
