Ingredients

Scale
  • 1 bunch fresh asparagus, trimmed
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup toasted pine nuts (optional)
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil (for dressing)
  • 1 tsp Dijon mustard
  • 1/2 tsp honey (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss the asparagus with olive oil, salt, and pepper until well-coated.
  3. Place the asparagus on the grill and cook for 3-4 minutes per side, until tender and slightly charred.
  4. While the asparagus is grilling, prepare the dressing by whisking together the lemon juice, olive oil, Dijon mustard, honey (if using), salt, and pepper in a small bowl.
  5. Once the asparagus is grilled, remove it from the heat and let it cool slightly. Cut the asparagus into 2-inch pieces.
  6. Arrange the grilled asparagus on a platter or in a large bowl. Top with crumbled feta, sliced red onion, toasted pine nuts (if using), and a drizzle of the lemon dressing.
  7. Garnish with fresh parsley and serve immediately, or chill in the refrigerator for a few hours before serving.

Notes

  • Make sure to trim the tough ends of the asparagus before grilling.
  • For added flavor, consider marinating the asparagus in the olive oil and seasoning for 30 minutes before grilling.
  • This salad can be served warm or cold, making it a versatile dish for any occasion.
