Description

A refreshing salad featuring crisp green beans tossed with cherry tomatoes, fresh herbs, and crumbled feta cheese, dressed with a zesty lemon-garlic vinaigrette.


Ingredients

Scale
  • 2 pounds green beans
  • 1/3 cup freshly squeezed lemon juice
  • 2 cloves garlic
  • 1/3 cup extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 14 oz grape or cherry tomatoes
  • 1/2 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh Italian parsley leaves
  • 1/2 cup feta cheese

Instructions

  1. Bring a large pot of water to boil. Add green beans and cook for 3 minutes. Drain using a mesh strainer and transfer to an ice water bowl.
  2. In a small bowl, whisk together lemon juice, garlic, olive oil, oregano, salt, and pepper.
  3. In a large bowl, combine halved tomatoes, basil, parsley, and cooled green beans.
  4. Pour dressing over the salad and gently toss to combine. Fold in cubed feta cheese.

Notes

  • For a stronger garlic flavor, you can add more garlic cloves.
  • This salad is best served fresh, but can be stored in the refrigerator for up to a day.
