A refreshing salad featuring crisp green beans tossed with cherry tomatoes, fresh herbs, and crumbled feta cheese, dressed with a zesty lemon-garlic vinaigrette.
Ingredients

- 2 pounds green beans
- 1/3 cup freshly squeezed lemon juice
- 2 cloves garlic
- 1/3 cup extra virgin olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 14 oz grape or cherry tomatoes
- 1/2 cup chopped fresh basil leaves
- 1/4 cup chopped fresh Italian parsley leaves
- 1/2 cup feta cheese
Instructions
- Bring a large pot of water to boil. Add green beans and cook for 3 minutes. Drain using a mesh strainer and transfer to an ice water bowl.
- In a small bowl, whisk together lemon juice, garlic, olive oil, oregano, salt, and pepper.
- In a large bowl, combine halved tomatoes, basil, parsley, and cooled green beans.
- Pour dressing over the salad and gently toss to combine. Fold in cubed feta cheese.
Notes
- For a stronger garlic flavor, you can add more garlic cloves.
- This salad is best served fresh, but can be stored in the refrigerator for up to a day.
