- 4 boneless, skinless chicken breasts
- 1 cup plain Greek yogurt
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- Juice of 1 lemon
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional garnish: chopped parsley, lemon wedges
Instructions
- In a large bowl, whisk together the Greek yogurt, olive oil, garlic, lemon juice, red wine vinegar, oregano, paprika, cumin, salt, and pepper.
- Add the chicken breasts to the bowl and coat them evenly with the marinade.
- Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor and tenderness.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Remove the chicken from the marinade and place on the prepared baking sheet.
- Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before slicing. Garnish with fresh parsley and serve with lemon wedges if desired.
Notes
- For best results, marinate the chicken overnight.
