Description

This Greek Yogurt Marinated Chicken Breasts recipe yields tender and flavorful chicken with a boost of Mediterranean flavors.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional garnish: chopped parsley, lemon wedges

Instructions

  1. In a large bowl, whisk together the Greek yogurt, olive oil, garlic, lemon juice, red wine vinegar, oregano, paprika, cumin, salt, and pepper.
  2. Add the chicken breasts to the bowl and coat them evenly with the marinade.
  3. Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor and tenderness.
  4. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  5. Remove the chicken from the marinade and place on the prepared baking sheet.
  6. Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Let rest for 5 minutes before slicing. Garnish with fresh parsley and serve with lemon wedges if desired.
