This dish is not only a quick solution for a hectic weeknight dinner, but it also brings a burst of flavor that will impress your loved ones.

- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg, beaten
- 1 tablespoon olive oil (for cooking)
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- Zest and juice of 1 lemon
- 1/4 cup chopped fresh dill
- Salt and pepper to taste
Instructions
- In a large bowl, mix the ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, salt, pepper, and egg until well combined. Shape the mixture into meatballs, about 1 inch each.
- Heat the olive oil in a large skillet over medium heat. Cook the meatballs for 10–12 minutes, turning them occasionally, until they are browned and thoroughly cooked. Once done, remove the meatballs from the skillet and set them aside.
- In a medium-sized saucepan, add 1 tablespoon of olive oil and heat over medium heat. Add the rice and toast it for 2–3 minutes, stirring regularly, until it starts to become golden.
- Pour in the chicken broth and add the lemon zest and juice. Bring to a boil, then reduce the heat to low. Cover and let simmer for 15–20 minutes until the rice is cooked and the liquid has been absorbed.
- Fluff up the cooked rice using a fork, stir in the chopped dill, and season with salt and pepper to your liking. Serve the rice on plates and place the turkey meatballs on top. Optionally, garnish with extra dill or parsley.
Notes
- For a gluten-free option, use gluten-free breadcrumbs.
- Feel free to adjust the herbs according to your taste.
- These meatballs can be made ahead and frozen for later use.
