Ingredients
- 8 oz pasta (short cut) – rotini or penne
- 1/2 English cucumber, sliced
- 1 cup grape tomatoes, halved
- 1/2 cup finely chopped red onion
- 1/2 cup sliced Kalamata olives
- 1/2 cup Feta cheese, crumbled
- 1/4 cup chopped parsley
- Optional: 1/2 cup bell peppers, diced
- Optional: 1/4 cup artichoke hearts, chopped
- Optional: 1/2 cup grilled chicken or shrimp
- Optional: 1/4 cup sun-dried tomatoes
- Optional: 1/4 tsp red pepper flakes
Instructions
- Cook the pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
- Chop the vegetables: cucumber, tomatoes, and red onion.
- Mix the dressing by combining olive oil, lemon juice, grated garlic, dried oregano, salt, and black pepper in a jar and shake well.
- In a large bowl, combine the cooled pasta, chopped vegetables, olives, parsley, and feta cheese. Drizzle with half of the dressing and mix gently.
- Let the salad chill in the fridge for at least 30 minutes before serving.
