Ingredients

  • 8 oz pasta (short cut) – rotini or penne
  • 1/2 English cucumber, sliced
  • 1 cup grape tomatoes, halved
  • 1/2 cup finely chopped red onion
  • 1/2 cup sliced Kalamata olives
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup chopped parsley
  • Optional: 1/2 cup bell peppers, diced
  • Optional: 1/4 cup artichoke hearts, chopped
  • Optional: 1/2 cup grilled chicken or shrimp
  • Optional: 1/4 cup sun-dried tomatoes
  • Optional: 1/4 tsp red pepper flakes

Instructions

  1. Cook the pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Chop the vegetables: cucumber, tomatoes, and red onion.
  3. Mix the dressing by combining olive oil, lemon juice, grated garlic, dried oregano, salt, and black pepper in a jar and shake well.
  4. In a large bowl, combine the cooled pasta, chopped vegetables, olives, parsley, and feta cheese. Drizzle with half of the dressing and mix gently.
  5. Let the salad chill in the fridge for at least 30 minutes before serving.
