Ingredients

- 1 English cucumber, diced
- 2 pints grape/cherry tomatoes, halved
- 8oz feta, diced
- 1/4 cup chopped parsley
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Wash and dry the cucumber, tomatoes, and parsley.
- Dice the cucumber and halve the tomatoes. Chop the parsley.
- Add cucumber, tomatoes, parsley, and feta to a large bowl.
- In a small bowl or jar, whisk together olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper.
- Pour the dressing over the salad ingredients.
- Gently toss everything together until well combined.
- Let the salad sit for 10 minutes for the flavors to meld.
- Serve chilled or at room temperature. Enjoy!

- For added flavor, consider adding olives or bell peppers.
