Description

A refreshing Greek salad featuring cucumbers, tomatoes, feta cheese, and a tangy dressing.


Ingredients

  • 1 English cucumber, diced
  • 2 pints grape/cherry tomatoes, halved
  • 8oz feta, diced
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Wash and dry the cucumber, tomatoes, and parsley.
  2. Dice the cucumber and halve the tomatoes. Chop the parsley.
  3. Add cucumber, tomatoes, parsley, and feta to a large bowl.
  4. In a small bowl or jar, whisk together olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper.
  5. Pour the dressing over the salad ingredients.
  6. Gently toss everything together until well combined.
  7. Let the salad sit for 10 minutes for the flavors to meld.
  8. Serve chilled or at room temperature. Enjoy!
