A delicious and healthy recipe for Greek Chicken Stuffed Peppers that combines ground chicken, rice, feta cheese, and olives, all baked to perfection.

- 4 large bell peppers
- 1 pound ground chicken
- 1 cup cooked rice
- 1/2 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, chopped
- 1/2 cup diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat and cook the ground chicken until browned.
- Add cooked rice, feta cheese, olives, diced tomatoes, oregano, garlic powder, salt, and pepper to the skillet. Mix well.
- Stuff the mixture into the bell peppers.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
- Serve warm and enjoy!
