Description

A delicious and healthy recipe for Greek Chicken Stuffed Peppers that combines ground chicken, rice, feta cheese, and olives, all baked to perfection.


Ingredients

  • 4 large bell peppers
  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, chopped
  • 1/2 cup diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and cook the ground chicken until browned.
  4. Add cooked rice, feta cheese, olives, diced tomatoes, oregano, garlic powder, salt, and pepper to the skillet. Mix well.
  5. Stuff the mixture into the bell peppers.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
  8. Serve warm and enjoy!
