Description

As a busy mom, I know how challenging it can be to whip up a meal that’s both delicious and satisfying. That’s where my Greek Cabbage Casserole comes in! This dish is a delightful twist on traditional Greek flavors, combining tender cabbage leaves with a savory filling of ground meat, rice, and spices.


Ingredients

  • 1 large head of green cabbage
  • 1 pound ground beef or lamb
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup cooked rice
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Olive oil for cooking

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Remove the core from the cabbage and carefully peel off 12-15 leaves. Blanch the leaves in boiling water for 2-3 minutes until softened, then drain and set aside.
  3. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing for 3-4 minutes until the onion is translucent.
  4. Add the ground beef or lamb to the skillet, cooking until browned. Drain any excess fat.
  5. Stir in the diced tomatoes, cooked rice, oregano, cinnamon, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
  6. Lay a cabbage leaf flat and spoon a generous amount of the meat mixture onto the center. Fold the sides over and roll it up tightly. Repeat with the remaining leaves and filling.
  7. Place the cabbage rolls seam-side down in a large baking dish. Pour any remaining meat mixture over the top and sprinkle with crumbled feta cheese.
  8. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.

Notes

  • For a vegetarian version, substitute the meat with lentils or mushrooms.
  • Feel free to add other spices or herbs according to your taste.
  • Leftovers can be stored in the refrigerator for up to 3 days.
