Ingredients

  • 3/4 cup shredded romaine or iceberg lettuce
  • 12 strips bacon, cooked until crispy
  • 3 large beefsteak tomatoes, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon tomato marinade from marinated tomatoes

Instructions

  1. In a large skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain and cool completely.
  2. In a shallow dish, whisk together olive oil, red wine vinegar, salt, and black pepper. Add the sliced tomatoes, turning gently to coat. Let marinate for at least 10 minutes while preparing other ingredients.
  3. In a small bowl, combine mayonnaise with 1 tablespoon of the tomato marinade. Mix well until smooth and creamy.
  4. Warm the wraps in the microwave for 10-15 seconds to make them pliable. Lay each wrap flat and spread about 1 tablespoon of secret sauce evenly over the surface. Top with shredded lettuce, 3 strips of bacon, and 3-4 slices of marinated tomato drained on paper towels. Avoid overfilling.
  5. Roll each wrap tightly, folding in the sides to secure the filling. Let the wraps rest for 2-3 minutes to allow ingredients to settle. Cut in half on a diagonal if desired and serve immediately.
