Ingredients

  • 454 g pork tenderloin, silver skin removed
  • 1/2 tsp kosher salt, divided
  • 1/2 tsp black pepper, divided
  • 1/2 tsp garlic powder
  • 1 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 3 tbsp pure maple syrup
  • 2 tbsp Dijon mustard, creamy
  • 120 ml reduced sodium beef broth
  • 2 tbsp reduced sodium soy sauce
  • Minced fresh parsley (for garnish)

Instructions

  1. Set the oven temperature to 204°C (400°F) to preheat.
  2. Remove the silver skin from the pork tenderloin and pat dry thoroughly with paper towels.
  3. In a small bowl, whisk together soy sauce, minced garlic, maple syrup, Dijon mustard, 1/4 tsp kosher salt, and 1/4 tsp black pepper until well combined.
  4. Rub the pork tenderloin evenly with garlic powder, dried rosemary, dried thyme, dried oregano, paprika, the remaining 1/4 tsp kosher salt, and 1/4 tsp black pepper.
  5. Heat vegetable oil in an oven-safe skillet over medium-high heat. Sear the tenderloin on all sides until browned, about 2-3 minutes per side.
  6. Brush the prepared glaze over the pork, then transfer the skillet to the preheated oven. Roast for 20-25 minutes or until the internal temperature reaches 63°C (145°F).
  7. Remove pork from oven and let rest for 5-10 minutes before slicing. Garnish with minced fresh parsley before serving.
