Description

A delicious and flavorful German Potato Salad recipe with bacon and a tangy dressing.


Ingredients

  • 2 pounds baby red potatoes
  • 8 slices bacon
  • 1 small yellow onion
  • 3 garlic cloves
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • ⅓ cup apple cider vinegar
  • Kosher salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the potatoes in salted water until fork-tender (10-15 minutes). Drain and let cool before cutting into chunks.
  2. In a skillet, fry bacon until crispy; drain on paper towels.
  3. Sauté diced onion in bacon fat for 3-4 minutes, then add minced garlic and cook for another minute.
  4. Whisk together honey, Dijon mustard, vinegar, salt, and pepper in the skillet with onions and garlic; cook briefly.
  5. Combine potatoes with dressing and bacon in a bowl; toss gently to mix well.
  6. Garnish with chopped fresh parsley before serving.
