Description

Delicious garlic shrimp and avocado skewers perfect for grilling.


Ingredients

  • 1 lb (450 g) large raw shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 3 garlic cloves, finely minced
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, finely chopped
  • 2 ripe avocados, cut into 1-inch cubes
  • 1 medium red onion, cut into 1-inch chunks
  • 1 lemon, cut into wedges (for garnish)

Instructions

  1. In a medium bowl, whisk together olive oil, minced garlic, lemon juice, smoked paprika, salt, pepper, red pepper flakes, and chopped parsley.
  2. Add the shrimp to the marinade, tossing to coat evenly. Let marinate for 10 minutes at room temperature.
  3. Thread shrimp, avocado cubes, and red onion chunks alternately onto skewers. Start and finish each skewer with shrimp for stability.
  4. Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
  5. Grill skewers for 2–3 minutes per side, turning once, until shrimp are opaque and lightly charred, and avocados show grill marks.
  6. Remove from grill and serve immediately with lemon wedges.

  • For extra flavor, let shrimp marinate for longer if time allows.
