- 1 lb (450 g) large raw shrimp, peeled and deveined
- 3 tbsp olive oil
- 3 garlic cloves, finely minced
- 1 tbsp freshly squeezed lemon juice
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp fresh parsley, finely chopped
- 2 ripe avocados, cut into 1-inch cubes
- 1 medium red onion, cut into 1-inch chunks
- 1 lemon, cut into wedges (for garnish)
Instructions
- In a medium bowl, whisk together olive oil, minced garlic, lemon juice, smoked paprika, salt, pepper, red pepper flakes, and chopped parsley.
- Add the shrimp to the marinade, tossing to coat evenly. Let marinate for 10 minutes at room temperature.
- Thread shrimp, avocado cubes, and red onion chunks alternately onto skewers. Start and finish each skewer with shrimp for stability.
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
- Grill skewers for 2–3 minutes per side, turning once, until shrimp are opaque and lightly charred, and avocados show grill marks.
- Remove from grill and serve immediately with lemon wedges.
Notes
- For extra flavor, let shrimp marinate for longer if time allows.
- Use fresh ingredients for the best taste.
- Adjust the amount of red pepper flakes to your spice preference.
