Description

As a passionate home cook, I find joy in creating dishes that not only taste amazing but also bring a splash of color to my table. One of my all-time favorites is Garlic Parmesan Shrimp and Vegetables. This dish is like a warm hug on a plate, combining succulent shrimp with vibrant veggies, all enveloped in a rich, cheesy embrace. It’s a recipe that never fails to impress, whether I’m hosting friends or simply enjoying a cozy dinner at home.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 medium zucchini, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 ½ tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the shrimp by rinsing fresh shrimp or thawing frozen shrimp.
  2. Chop the vegetables into bite-sized pieces.
  3. Toss the shrimp with olive oil, minced garlic, Italian seasoning, salt, and pepper.
  4. Sauté the vegetables in a skillet over medium heat for 5-7 minutes.
  5. Add the shrimp to the skillet and sprinkle with Parmesan cheese, stirring gently to combine.

Notes

  • Prep ahead by storing shrimp and vegetables in the fridge until ready to cook.
  • Don’t overcrowd the pan to ensure proper cooking.
  • Adjust seasoning to taste.
  • Fresh herbs can be added just before serving for extra flavor.
  • Leftovers can be stored in an airtight container for 2-3 days.
