- 1 lb large shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 medium zucchini, sliced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 ½ tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the shrimp by rinsing fresh shrimp or thawing frozen shrimp.
- Chop the vegetables into bite-sized pieces.
- Toss the shrimp with olive oil, minced garlic, Italian seasoning, salt, and pepper.
- Sauté the vegetables in a skillet over medium heat for 5-7 minutes.
- Add the shrimp to the skillet and sprinkle with Parmesan cheese, stirring gently to combine.
