- 4 medium russet potatoes, thinly sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 jalapeño, sliced (optional)
- Fresh parsley, chopped (for garnish)
- Sour cream or Greek yogurt, for serving
Instructions
- Preheat oven to 200°C. Line a large baking sheet with parchment paper.
- In a large bowl, toss thinly sliced potatoes with olive oil, minced garlic, smoked paprika, Italian seasoning, salt, and pepper until evenly coated.
- Arrange seasoned potato slices in a single layer on the prepared baking sheet. Bake for 25–30 minutes, flipping halfway through, until crisp and golden brown.
- Remove the tray from the oven. Evenly distribute mozzarella and Parmesan cheeses over the hot potato slices. Top with sliced jalapeños if desired.
- Return tray to oven and bake for an additional 5–7 minutes, or until cheese is fully melted and bubbly.
- Once cooked, allow to cool slightly. Garnish with chopped fresh parsley before serving alongside sour cream or Greek yogurt.
Notes
- For an extra kick, add more jalapeños or a drizzle of hot sauce.
