- 1/2 cup shredded mozzarella cheese 🧀
- 1 egg, lightly beaten 🥚
- 3 cloves garlic, minced 🧄
- 1/2 small onion, finely diced 🧅
- 1 tsp Italian seasoning 🌿
- Salt and pepper to taste 🧂
- 2 tbsp fresh parsley, chopped 🌱
- 1 tbsp olive oil 🫒
For the Garlic Parmesan Topping:
- 1/4 cup grated Parmesan cheese 🧀
- 1/4 cup breadcrumbs 🍞
- 2 tbsp melted butter 🧈
- 1 clove garlic, minced 🧄
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine:
✅ Ground chicken
✅ Breadcrumbs
✅ Parmesan cheese
✅ Mozzarella cheese
✅ Beaten egg
✅ Minced garlic
✅ Diced onion
✅ Italian seasoning
✅ Salt & pepper
✅ Chopped parsley
Mix until just combined—don’t overmix or the meatloaf may turn out dense!
Transfer the mixture to your loaf pan or baking sheet and shape it into a loaf with your hands or a spatula.
In a small bowl, mix together:
✅ Grated Parmesan
✅ Breadcrumbs
✅ Melted butter
✅ Minced garlic
Spread this delicious topping evenly over the meatloaf, pressing it down gently so it sticks.
Bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C). The top should be golden brown and crispy.
Remove from the oven and let it rest for 5 minutes before slicing. Garnish with fresh parsley and serve with your favorite sides.
