Description

A delicious and easy-to-make Garlic Butter Shrimp Rice Bake that combines succulent shrimp, fluffy rice, and aromatic seasonings for a flavorful meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup long-grain white rice, rinsed
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 4 tablespoons unsalted butter, melted
  • 2 cups low-sodium chicken or seafood broth
  • Juice of 1 lemon
  • 1/3 cup chopped fresh parsley
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F.
  2. In a 9×13 inch baking dish, combine rice, onion, half the minced garlic, 2 tablespoons melted butter, smoked paprika, salt, and black pepper. Add broth and lemon juice and stir gently to distribute ingredients evenly.
  3. Cover the baking dish tightly with foil and bake for 25 minutes to allow the rice to begin absorbing liquid.
  4. While rice bakes, mix shrimp in a bowl with the remaining garlic, 2 tablespoons melted butter, and red pepper flakes if desired.
  5. Remove the foil after 25 minutes, carefully fluff rice with a fork, and evenly arrange seasoned shrimp over the rice.
  6. Return dish to oven, uncovered, and bake for an additional 10 minutes until shrimp turn pink and are just cooked through, and rice is tender.
  7. Scatter chopped parsley over the top before serving.

Notes

  • For a spicier kick, increase the amount of red pepper flakes.
  • Feel free to substitute the shrimp with your choice of seafood.
