Description

A fun and flavorful bread recipe made with Fruity Pebbles cereal, perfect for a sweet breakfast or snack.


Ingredients

  • 2 cups Fruity Pebbles cereal
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup sugar
  • 1/2 cup unsweetened applesauce or vegetable oil
  • 1 cup plain Greek yogurt
  • 3 large eggs
  • 1/2 tsp vanilla

Instructions

  1. Heat the oven to 350°F. Grab a loaf pan, cover the inside with parchment, and give it a good coat of spray to keep things from sticking.
  2. Throw the yogurt, sugar, eggs, vanilla, and applesauce (or oil) into a bowl. Stir it up until everything’s nice and smooth.
  3. Dump in the flour, baking powder, and salt. Mix gently until it all blends together.
  4. Add the Fruity Pebbles and carefully fold them in so they stay light and crunchy.
  5. Pour your batter into the loaf pan. Toss some extra Fruity Pebbles on top for a fun finish.
  6. Pop it into the oven for 45 to 55 minutes. It’s ready when the edges look golden and a toothpick in the middle comes out clean.

Notes

  • For a richer flavor, you can use vegetable oil instead of applesauce.
  • Make sure not to overmix once you add the Fruity Pebbles to maintain their crunchiness.
  • Store leftovers in an airtight container at room temperature for a couple of days.
