  • 225 g cream cheese, softened
  • 40 g powdered sugar
  • 1 teaspoon vanilla extract
  • 30 ml lemon juice
  • 30 ml heavy cream or milk
  • Seasonal Fruit Topping
  • 120 g fresh strawberries, sliced
  • 75 g blueberries
  • 80 g green grapes, halved
  • 1 peach, thinly sliced
  • 1 kiwi, peeled and sliced
  • 100 g raspberries

Instructions

  1. Preheat the oven to 175°C. Line a 30 cm pizza pan or baking sheet with parchment paper.
  2. In a mixing bowl, beat softened butter and granulated sugar together until light and fluffy. Add the egg and vanilla extract, mixing well.
  3. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually blend the dry ingredients into the wet mixture until a soft dough forms.
  4. Press the dough evenly onto the prepared pan, forming a round crust approximately 0.6 cm thick.
  5. Bake the crust for 13 to 15 minutes or until the edges are lightly golden. Cool completely on the pan before decorating.
  6. In a clean bowl, beat the softened cream cheese until smooth. Incorporate the powdered sugar, vanilla extract, lemon juice, and heavy cream or milk, mixing until the glaze is silky and spreadable.
  7. Evenly spread the cream cheese glaze over the cooled cookie crust.
  8. Neatly arrange the fresh fruits on top in vibrant, decorative patterns.
  9. Refrigerate for at least 30 minutes prior to slicing and serving.
