- 2 cups rolled oats
- 1/2 cup natural almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup fresh raspberries (or frozen, thawed)
- 1/2 cup Greek yogurt (or dairy-free alternative)
- 1/4 cup shredded coconut (optional)
- 1/4 cup chopped nuts (e.g., almonds or walnuts, optional)
Instructions
- In a mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, and salt. Stir until all ingredients are well mixed and form a thick dough-like consistency.
- Line a baking sheet with parchment paper. Take a tablespoon of the oat mixture and flatten it into a round disc about 1/4-inch thick. Repeat this process until you have approximately 12 discs, placing them evenly on the baking sheet.
- In another bowl, mix the Greek yogurt with the fresh raspberries gently to avoid crushing them too much, creating a chunky raspberry swirl. If desired, fold in the shredded coconut and chopped nuts for added texture.
- Take half of the oat discs and spoon a generous amount of the raspberry yogurt filling onto each. Place the remaining oat discs on top to form sandwiches. Gently press down to seal.
- Place the assembled sandwiches in the freezer for at least 2 hours, or until they are solid.
- Once frozen, take the sandwiches out of the freezer and let them sit for a couple of minutes at room temperature to soften slightly for easier biting. Enjoy your deliciously unique treat!
