Description

A delightful treat that combines Greek yogurt and peanut butter, perfect for a cool snack or dessert.

Ingredients

Scale
  • 1 cup Greek yogurt (plain or vanilla)
  • 1/3 cup peanut butter (creamy or crunchy, at room temperature)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1/3 cup mini chocolate chips (or chopped dark chocolate)
  • Optional: 1/4 teaspoon cinnamon
  • Optional: 1 tablespoon chia seeds or ground flaxseed
  • Optional: 2 tablespoons chopped nuts (almonds, walnuts, or pecans)

Instructions

  1. Line a baking sheet or tray with parchment paper, ensuring it fits in your freezer.
  2. In a medium bowl, combine Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract; stir until smooth.
  3. Add mini chocolate chips (or chopped dark chocolate) and gently fold into the mixture. Incorporate any optional add-ins if using.
  4. Drop 1 to 1.5 tablespoon portions of the mixture onto the lined tray, spacing them about an inch apart.
  5. Place the tray in the freezer and freeze for 1-2 hours until firm.
  6. Transfer the frozen bites to a freezer-safe container or zip-top bag, placing parchment paper between layers if stacking.
  7. Enjoy straight from the freezer, allowing to sit for 30 seconds at room temperature for the best texture.

Notes

  • Feel free to adjust sweetness by varying the amount of honey or maple syrup.
  • For a healthier option, consider using unsweetened Greek yogurt.
  • These bites are great as a post-workout snack or dessert.
