Description

Fresh Vegetable Tortilla Roll Ups are a quick and tasty snack featuring a blend of fresh vegetables and creamy filling wrapped in soft tortillas.


Ingredients

  • 1 cup diced vegetables: broccoli, carrots, and red bell pepper
  • 4 ounces softened cream cheese
  • 1/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 large flour tortillas meant for burritos
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons sliced green onions

Instructions

  1. Prepare the Vegetables and Ingredients: Choose and chop your favorite veggies, mincing them extra small for even flavor distribution. Allow the cream cheese to soften at room temperature.
  2. Mix the Cream Cheese Filling: In a medium bowl, combine the softened cream cheese with mayonnaise, garlic powder, dill, salt, and pepper until smooth.
  3. Prepare and Fill the Tortillas: Warm the tortillas in the microwave for 15-20 seconds. Spread the cream cheese mixture evenly over each tortilla and sprinkle the veggies, cheese, and chopped onions on top.
  4. Roll and Secure the Tortillas: Roll the tortillas tightly from one edge to the other, using toothpicks to secure them. Freeze for 20 minutes or chill overnight for easier slicing.
  5. Slice and Serve: Remove toothpicks, slice rolls into pinwheels, and arrange on a platter to serve.
