- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 cup sugar
- 4 cups bread cubes
- 1/4 cup melted butter
- Optional: Fresh berries, chocolate chips, nuts, nutmeg, orange zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and sugar until smooth.
- Add bread cubes to the egg mixture and stir gently until coated.
- Spoon the mixture into a greased muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
Notes
- Stale bread works best for soaking up the egg mixture.
- Don’t overmix the batter to keep muffins fluffy.
- Allow muffins to cool before removing from the tin.
- Store leftovers in an airtight container in the fridge for up to three days.
