Ingredients

  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 4 cups bread cubes
  • 1/4 cup melted butter
  • Optional: Fresh berries, chocolate chips, nuts, nutmeg, orange zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and sugar until smooth.
  3. Add bread cubes to the egg mixture and stir gently until coated.
  4. Spoon the mixture into a greased muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 20-25 minutes or until golden brown.

Notes

  • Stale bread works best for soaking up the egg mixture.
  • Don’t overmix the batter to keep muffins fluffy.
  • Allow muffins to cool before removing from the tin.
  • Store leftovers in an airtight container in the fridge for up to three days.
