Description

French Onion Beef and Rice Casserole. This dish is like a cozy hug on a chilly evening, bringing together the rich flavors of caramelized onions, savory beef, and creamy cheese. It’s a one-pan wonder that makes dinner a breeze, and trust me, it’s a crowd-pleaser!

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 1 cup shredded Swiss cheese
  • 1/2 cup crispy fried onions (for topping)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté the sliced onions for 10-12 minutes until golden brown.
  2. Add ground beef to the skillet, breaking it apart as it cooks for about 5-7 minutes until browned. Drain excess grease.
  3. Rinse the rice under cold water and prepare it according to package instructions or add it directly to the casserole with the broth.
  4. In a large mixing bowl, combine the cooked beef and onion mixture with the uncooked rice and beef broth, stirring until well mixed.
  5. Transfer the mixture to a greased 9×13-inch baking dish, cover with aluminum foil, and bake at 350°F (175°C) for 30 minutes.
  6. Remove the foil, sprinkle shredded Swiss cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  7. Top with crispy fried onions and bake for another 5 minutes until golden and crisp.

Notes

  • Caramelization is key for flavor.
  • Using homemade beef broth enhances the dish.
  • Let the casserole rest for 5-10 minutes after baking for easier serving.
  • Leftovers can be stored in an airtight container for up to 3 days.
  • The casserole can be frozen before baking; add extra time when cooking from frozen.
