- 12 large jalapeño peppers, halved and seeded
- 1/2 pound shrimp, peeled and deveined

- 1/2 cup cream cheese, softened
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- Fresh parsley, chopped (for garnish)
Instructions
- In a large mixing bowl, combine shrimp, Cajun seasoning, olive oil, salt, and pepper. Mix well.
- In another bowl, mix cream cheese, cheddar cheese, mozzarella cheese, and minced garlic until smooth.
- Add the shrimp mixture to the cheese mixture and stir until well combined.
- Stuff the jalapeño halves with the shrimp and cheese filling.
- Arrange the stuffed jalapeños on a baking sheet and bake at 375°F (190°C) for 20-25 minutes or until the jalapeños are tender and the filling is bubbly.
- Garnish with chopped parsley before serving.
Notes
- Choose large jalapeños for easier stuffing.
- Adjust the amount of Cajun seasoning to control the spice level.
- Serve with ranch or blue cheese dressing for dipping.
