Description

A flavorful breakfast dish combining eggs, bacon, and cheese stuffed into a tortilla.


Ingredients

  • 2 cups shredded cheese
  • 1/4 cup whole milk or heavy cream
  • 1/2 cup diced red pepper
  • 6 large eggs
  • 8 slices of thin bacon
  • 6 sausage links or 1/4 pound ground sausage
  • 2 diced jalapeños (seeds removed)
  • 1/2 cup diced onions
  • 2 tablespoons unsalted butter
  • 8 (6-inch) soft flour tortillas
  • Optional: some pico de gallo

Instructions

  1. Crack the eggs into a mixing bowl, pour in the milk or cream, and whisk until they look smooth and blended.
  2. Use a large skillet to cook the bacon to your preferred crispiness. Place them onto paper towels to absorb the grease.
  3. Set the pan back to medium heat and cook the sausage until it’s fully browned. Drain on a paper towel once done.
  4. In the same skillet, toss in the diced onions and peppers. Stir and cook for 3-4 minutes until softened. Take them out and set aside.
  5. Clean the skillet with paper towels and heat it over low-medium heat. Add a tablespoon of butter, then pour in the whisked eggs. Stir gently and cook until fluffy and set, then set them aside.
  6. Put the skillet on medium heat and butter one side of a tortilla. Place the buttered side down in the skillet, then spread 1/2 cup of shredded cheese, scrambled eggs, bacon pieces, sausage, onions, and peppers. If you like, sprinkle on a bit more cheese before adding the top tortilla.
  7. Butter the side of the second tortilla facing up, then cook the quesadilla for 2-3 minutes. Use a metal spatula to carefully flip it over. Let it cook another 2-3 minutes until the outside is golden and crisp.
  8. Slice the quesadilla into four pieces with a pizza cutter or knife. If you’d like, serve with pico de gallo on the side.
