Easy Dulce de Leche Cinnamon Sandwich Cookies are a delightful treat combining soft cinnamon-sugar cookies with a rich dulce de leche filling.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sugar (for rolling)
- 2 tsp ground cinnamon
- 1 tbsp butter (for filling)
- 1 can (13.4 oz) dulce de leche (such as Nestle Dulce de Lechera)
Instructions
- Cream together the softened butter and 1 cup granulated sugar in a large mixing bowl for about 4 minutes until light and fluffy.
- Add the egg and vanilla extract, mixing for an additional minute until fully incorporated.
- Gradually mix in the all-purpose flour, baking soda, and salt until a dough forms.
- Chill the dough in the refrigerator for 10-15 minutes.
- Combine 1/2 cup granulated sugar and 2 teaspoons cinnamon in a shallow bowl.
- Roll the chilled dough into 16 to 24 balls, coating each ball in the cinnamon-sugar mixture.
- Place the coated dough balls onto a lined baking sheet.
- Bake in a preheated oven at 350°F (175°C) for 9 to 11 minutes until edges are lightly golden and centers remain soft.
- Let cookies cool before preparing the filling.
- Melt 1 tablespoon of butter in a small saucepan, then stir in the dulce de leche until smooth.
- Spread a layer of the dulce de leche filling on the bottom of one cookie, and sandwich it with another cookie. Repeat for remaining cookies.
- Allow the assembled sandwiches to rest for an hour for the flavors to meld.
Notes
- Adjust the size of the cookie balls for larger or smaller cookies.
- Sprinkle remaining cinnamon-sugar on baked cookies for extra flavor.
