Description

Easter Rice Krispie Nests are a fun, festive treat perfect for celebrating the holiday. These nests are easy to make and are a delightful combination of Rice Krispies, marshmallows, and coconut, topped with Nutella and mini Cadbury eggs.


Ingredients

Scale
  • ½ cup unsalted butter
  • 20 oz mini marshmallows
  • ½ tsp salt
  • 2 tsp pure vanilla extract
  • 9 oz Rice Krispies cereal
  • 3 cups unsweetened coconut shreds
  • gel food coloring of your choice
  • 1 ½ cup Nutella hazelnut spread
  • 108 mini Cadbury eggs

Instructions

  1. Heat a large pot over low heat then add the butter and salt and melt.
  2. Once the butter is melted, add 1 ½ bags of the mini marshmallows and heat until melted, stirring constantly.
  3. Remove the pot from heat, add the vanilla and salt, and stir into the marshmallow mixture.
  4. Add roughly half of the rice krispies to the mixture. Gently mix with a rubber spatula until all the cereal is coated in the marshmallow mixture.
  5. Add remaining cereal and marshmallows and gently fold until fully incorporated.
  6. Lightly grease two 12 cup muffin tin pans with non-stick cooking spray.
  7. Scoop 3-4 tablespoons of the rice krispies and use your hands to press them down gently and mold them into the shape of the tin.
  8. Let the rice krispy nests sit for 30 minutes to allow them to form their shape.
  9. Add the shredded coconut to a zipper top bag along with 1-3 drops of the food coloring. Close the bag, shake, and massage the coconut until dyed.
  10. Once the nests have set, place a tablespoon of Nutella on top of each nest.
  11. Sprinkle the colored coconut shreds over the Nutella and add three mini Cadbury eggs to each nest.
  12. Carefully remove the nests from the muffin tin and serve!

Notes

  • Make sure to leave an indentation in the nests for the Nutella.
  • You can use multiple colors of food coloring for the coconut shreds.
  • Be gentle when removing the nests from the muffin tin to prevent breaking.
