- 1 small yellow onion, diced
- 3 cloves garlic, minced

- 4 cups sweet potatoes, peeled and diced (about 2 large sweet potatoes)
- 1 cup carrots, diced
- 4 cups vegetable broth
- 1/2 cup full-fat coconut milk (plus more for serving)
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onions and sauté until they turn translucent and fragrant, about 4-5 minutes.
- Stir in the minced garlic and fresh ginger. Let them cook for about 1 minute, then sprinkle in the curry powder, cumin, paprika, salt, and pepper. Stir well.
- Toss in the diced sweet potatoes and carrots. Stir them around to coat in the spiced onion mixture.
- Pour in the vegetable broth, ensuring all the veggies are submerged. Bring to a gentle boil, then reduce heat and let simmer for about 20 minutes.
- Once the vegetables are soft, remove from heat and blend the soup until smooth and creamy.
- Return the pot to low heat and stir in the coconut milk. Taste and adjust seasoning if needed.
- Ladle the bisque into bowls, drizzle with extra coconut milk, and serve.
Notes
- For a spicier version, add more curry powder or a pinch of cayenne pepper.
