Ingredients

  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups sweet potatoes, peeled and diced (about 2 large sweet potatoes)
  • 1 cup carrots, diced
  • 4 cups vegetable broth
  • 1/2 cup full-fat coconut milk (plus more for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onions and sauté until they turn translucent and fragrant, about 4-5 minutes.
  2. Stir in the minced garlic and fresh ginger. Let them cook for about 1 minute, then sprinkle in the curry powder, cumin, paprika, salt, and pepper. Stir well.
  3. Toss in the diced sweet potatoes and carrots. Stir them around to coat in the spiced onion mixture.
  4. Pour in the vegetable broth, ensuring all the veggies are submerged. Bring to a gentle boil, then reduce heat and let simmer for about 20 minutes.
  5. Once the vegetables are soft, remove from heat and blend the soup until smooth and creamy.
  6. Return the pot to low heat and stir in the coconut milk. Taste and adjust seasoning if needed.
  7. Ladle the bisque into bowls, drizzle with extra coconut milk, and serve.

Notes

  • For a spicier version, add more curry powder or a pinch of cayenne pepper.
