Description

A refreshing twist on the classic Caesar salad featuring crisp cucumber slices, creamy dressing, and crunchy croutons.


Ingredients

  • 1 large English cucumber, peeled and thinly sliced
  • 1/2 cup mayonnaise (preferably full-fat)
  • 2 tablespoons grated Parmesan cheese, plus more for garnish
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper, freshly ground
  • 1/8 teaspoon salt, or to taste
  • 1/4 cup croutons (homemade or store-bought)
  • Optional: Grilled chicken or shrimp for added protein

Instructions

  1. Peel the cucumber using a vegetable peeler.
  2. Thinly slice the cucumber into 1/8 inch thick slices.
  3. Optionally remove excess moisture by patting the cucumber slices dry or lightly salting and rinsing.
  4. In a medium bowl, whisk together mayonnaise, lemon juice, Dijon mustard, and Worcestershire sauce.
  5. Add minced garlic and grated Parmesan cheese to the dressing.
  6. Season the dressing with black pepper and salt, adjusting to taste.
  7. Whisk until smooth, adding water if needed for desired consistency.
  8. In a large bowl, gently toss the cucumber with the dressing until evenly coated.
  9. Add croutons just before serving and toss gently.
  10. Transfer to serving bowl, garnish with extra Parmesan and black pepper, and serve immediately.
