- 1 large English cucumber, peeled and thinly sliced
- 1/2 cup mayonnaise (preferably full-fat)
- 2 tablespoons grated Parmesan cheese, plus more for garnish
- 1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon Worcestershire sauce
- 1/4 teaspoon black pepper, freshly ground
- 1/8 teaspoon salt, or to taste
- 1/4 cup croutons (homemade or store-bought)
- Optional: Grilled chicken or shrimp for added protein
Instructions
- Peel the cucumber using a vegetable peeler.
- Thinly slice the cucumber into 1/8 inch thick slices.
- Optionally remove excess moisture by patting the cucumber slices dry or lightly salting and rinsing.
- In a medium bowl, whisk together mayonnaise, lemon juice, Dijon mustard, and Worcestershire sauce.
- Add minced garlic and grated Parmesan cheese to the dressing.
- Season the dressing with black pepper and salt, adjusting to taste.
- Whisk until smooth, adding water if needed for desired consistency.
- In a large bowl, gently toss the cucumber with the dressing until evenly coated.
- Add croutons just before serving and toss gently.
- Transfer to serving bowl, garnish with extra Parmesan and black pepper, and serve immediately.

- For best flavor, use freshly grated Parmesan cheese.
- This salad is ideal when served immediately to prevent sogginess.
