Description

Ingredients

  • 1 pound Persian cucumbers, sliced
  • 1 large avocado, or 2 medium, sliced
  • 1 small red onion, thinly sliced
  • 2 tablespoon minced parsley
  • 2 tablespoon minced basil leaves
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Place the oil, vinegar, garlic, lemon juice, and seasonings in a small jar and shake to emulsify.
  2. In a mixing bowl, add the sliced cucumbers, avocado, red onion, and parsley.
  3. Pour over the dressing and toss to combine.
  4. Top with crumbled cheese, basil (if using), and serve immediately.
