Description
A cozy and flavorful soup made with ground Italian sausage, sun-dried tomatoes, spinach, and heavy cream, cooked slowly in a crockpot.
Ingredients

- 2 lbs ground mild Italian sausage, cooked & drained
- 2 large onions, chopped
- 6 cloves garlic, minced
- 2 tsp dried oregano
- 1 cup sun-dried tomatoes, drained & chopped
- 12 cups chicken broth
- 3 cups spinach, chopped
- 1 ½ cups heavy cream
- ½ cup freshly grated Parmesan cheese (for serving)
Instructions
- In a skillet, brown the sausage until cooked through. Drain excess fat.
- Add cooked sausage, onions, garlic, oregano, sun-dried tomatoes, and chicken broth to your crockpot. Stir well.
- Cover and cook on low for 6–8 hours or high for 3–4 hours.
- About 30 minutes before serving, stir in spinach and heavy cream.
- Let it warm through, then serve hot with a generous sprinkle of Parmesan on top.
Notes
- Feel free to adjust the seasoning to your taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This soup can also be frozen for later use.
