Description

A cozy and flavorful soup made with ground Italian sausage, sun-dried tomatoes, spinach, and heavy cream, cooked slowly in a crockpot.


Ingredients

Scale
  • 2 lbs ground mild Italian sausage, cooked & drained
  • 2 large onions, chopped
  • 6 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 cup sun-dried tomatoes, drained & chopped
  • 12 cups chicken broth
  • 3 cups spinach, chopped
  • 1 ½ cups heavy cream
  • ½ cup freshly grated Parmesan cheese (for serving)

Instructions

  1. In a skillet, brown the sausage until cooked through. Drain excess fat.
  2. Add cooked sausage, onions, garlic, oregano, sun-dried tomatoes, and chicken broth to your crockpot. Stir well.
  3. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  4. About 30 minutes before serving, stir in spinach and heavy cream.
  5. Let it warm through, then serve hot with a generous sprinkle of Parmesan on top.

  • Feel free to adjust the seasoning to your taste.
  • Leftovers can be stored in the refrigerator for up to 3 days.
