Description
A rich and creamy Crockpot Jalapeño Popper Beef Stew that is packed with flavor and easy to prepare.
Ingredients
Scale
- 2 lbs beef stew meat, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 3–4 fresh jalapeños, seeded and diced (adjust to taste)
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup frozen corn
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- Fresh cilantro or green onions for garnish (optional)
Instructions
- Brown the Beef: Heat olive oil in a skillet over medium-high heat. Season the beef cubes with salt and pepper, then sear them in batches until they’re nicely browned on all sides. Transfer the beef to your crockpot.
- Sauté the Aromatics: In the same skillet, add the diced onion and minced garlic. Cook for 2–3 minutes, until fragrant and translucent. Stir in jalapeños and cook for 1 more minute. Pour this mixture into the crockpot with beef.
- Build the Base: Add beef broth and the entire can of diced tomatoes (with juices) into the crockpot. Stir in corn, cumin, paprika, and chili powder, mixing well.
- Let It Cook: Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender.
- Stir in Cream Cheese: About 30 minutes before serving, add softened cream cheese. Stir until fully melted and the stew becomes creamy.
- Add the Cheddar: Right before serving, stir in shredded cheddar cheese until melted.
- Serve It Up: Ladle the hot stew into bowls and top with cilantro or green onions, if using. Serve with crusty bread or rice.
Notes
- Adjust the number of jalapeños based on desired heat level.
- Great to serve with crusty bread or over rice for a hearty meal.
- This stew can be stored in the refrigerator for up to 3 days.
