A delicious recipe for crispy roasted cauliflower topped with sharp white cheddar and parmesan cheese, perfect as a side dish or a snack.

- 1 large cauliflower, broken into florets
- 6 tablespoons olive oil
- 1 teaspoon Old Bay seasoning
- 0.5 teaspoon chili pepper
- Fresh ground black pepper, to taste
- 225 grams sharp white cheddar cheese, grated
- 115 grams parmesan cheese, grated
Instructions
- Preheat the oven to 230°C. Separate the cauliflower into bite-sized florets, slicing any larger florets in half for even roasting.
- Combine florets in a large mixing bowl with 6 tablespoons of olive oil, tossing thoroughly to coat each piece.
- Sprinkle florets with 0.5 teaspoon of Old Bay seasoning, 0.25 teaspoon of chili pepper, and freshly ground black pepper. Toss well, then repeat with the same amounts to ensure even coverage.
- Transfer seasoned cauliflower to a foil-lined baking sheet, arranging florets in a single layer with any cut sides down. Roast on the top oven rack for 15 minutes.
- While cauliflower roasts, grate sharp white cheddar and parmesan cheeses.
- Remove the baking sheet from the oven. Evenly distribute grated cheeses over florets. Return to the top rack and bake for an additional 7–10 minutes, or until cheese is golden and crisp.
- Using a spatula, lift crispy cheese and cauliflower onto a serving dish. Serve immediately.
Notes
- For extra flavor, consider adding garlic powder or paprika to the seasoning mix.
- Make sure cauliflower florets are similar in size for even cooking.
