Ingredients
Scale
- 2 tbsp melted coconut oil, divided
- 4 cups brussels sprouts, halved or quartered if large
- 3 large carrots, cut into batons
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1/3 tsp salt

Instructions
- Preheat your oven to 450°F (232°C) and line a large baking sheet with a silicon baking mat or parchment paper.
- In a large mixing bowl, combine the brussels sprouts and carrot batons. Drizzle with 1 tablespoon of melted coconut oil and add the spices. Toss until well coated.
- Transfer the seasoned vegetables to the prepared baking sheet and spread them out evenly. Roast for about 25 minutes until slightly charred and fork-tender.

Notes
- Adding maple syrup at the end preserves a fresher taste.
- Ensure vegetables are spread out evenly for uniform roasting.
