- 1 pound lean ground beef (90% lean)
- 1 packet taco seasoning (about 2 tablespoons)
- 3/4 cup red enchilada sauce
- 10 corn tortillas
- 2 1/2 cups Oaxaca cheese, shredded (or Mexican cheese blend or Monterey Jack)
- 1 tablespoon olive oil, for brushing
- Salsa (for dipping)
- Queso dip (for dipping)
- Guacamole (for dipping)
- Sour cream
- Shredded lettuce
- Diced tomatoes
- Sliced jalapeños
Instructions
- Preheat your oven to 450°F (230°C).
- In a large skillet over medium-high heat, cook the ground beef until browned and no pink remains (about 5-7 minutes). Drain excess grease if necessary.
- Sprinkle the taco seasoning over the beef, add the red enchilada sauce, and simmer for 2-3 minutes.
- Warm the corn tortillas in the microwave wrapped in a damp paper towel for 30-60 seconds.
- Prepare a nonstick baking sheet or coat a regular baking sheet with cooking spray.
- Brush one side of each tortilla lightly with olive oil, place it on the baking sheet with the oiled side down, and layer cheese and beef mixture on half of the tortilla.
- Fold the tortilla, pressing it down and, if needed, securing it with a toothpick.
- Repeat with remaining tortillas, placing them in a single layer on the baking sheet.
- Bake in the preheated oven for 16 minutes until golden brown and crispy.
- Allow tacos to cool for 3 minutes before serving.
- Serve with salsa, queso dip, guacamole, and sour cream for dipping.
Notes
- Keep an eye on the tacos while baking to avoid over-browning.
- Tacos are best enjoyed immediately while warm and crispy.
- They can also be served at room temperature for parties.
