Instructions
- Sprinkle salt over the eggplant cubes for 15-30 minutes. Dry them off with paper towels.
- Mix the eggplant cubes in a big bowl with avocado oil and all the seasonings until everything’s coated well.
- Set the air fryer to 400°F and cook for 18 minutes. Give it a toss halfway so it browns evenly.
