This dish is a celebration of flavors and textures that dance together on your palate, making it perfect for any occasion.


Ingredients

  • Handful of roasted pistachios, chopped
  • 3 small or 2 medium beets
  • ½ tbsp olive oil, plus more for drizzling
  • Juice of ¼ lemon
  • Fresh dill, chopped
  • 5 oz feta cheese
  • Sea salt, to taste
  • ½ tbsp date syrup
  • 3.5 oz Greek yogurt
  • 1 tbsp apple cider vinegar
  • Black pepper, to taste

Instructions

  1. Prepare the beets by cutting them in half and boiling in salted water for about 20 minutes until tender.
  2. While the beets are cooking, whip the feta by blending it with Greek yogurt and lemon juice until smooth and creamy.
  3. Once the beets are cooked and cooled, whisk together apple cider vinegar, date syrup, and olive oil in a small bowl. Toss the sliced beets in this dressing and let marinate for 5 minutes.
  4. Spread the whipped feta on a serving plate, arrange the marinated beets on top, and sprinkle with chopped pistachios and fresh dill. Drizzle with olive oil and add black pepper to taste.

Notes

  • Wear gloves while handling beets to avoid staining your hands.
  • For a quicker option, roast the beets in the oven at 400°F (200°C) for 30-40 minutes.
  • Let the feta sit at room temperature for 15 minutes before blending for a creamier texture.
  • Chill the whipped feta for 30 minutes before serving for enhanced flavors.
