- Handful of roasted pistachios, chopped
- 3 small or 2 medium beets
- ½ tbsp olive oil, plus more for drizzling
- Juice of ¼ lemon
- Fresh dill, chopped
- 5 oz feta cheese
- Sea salt, to taste
- ½ tbsp date syrup
- 3.5 oz Greek yogurt
- 1 tbsp apple cider vinegar
- Black pepper, to taste
Instructions
- Prepare the beets by cutting them in half and boiling in salted water for about 20 minutes until tender.
- While the beets are cooking, whip the feta by blending it with Greek yogurt and lemon juice until smooth and creamy.
- Once the beets are cooked and cooled, whisk together apple cider vinegar, date syrup, and olive oil in a small bowl. Toss the sliced beets in this dressing and let marinate for 5 minutes.
- Spread the whipped feta on a serving plate, arrange the marinated beets on top, and sprinkle with chopped pistachios and fresh dill. Drizzle with olive oil and add black pepper to taste.
Notes
- Wear gloves while handling beets to avoid staining your hands.
- For a quicker option, roast the beets in the oven at 400°F (200°C) for 30-40 minutes.
- Let the feta sit at room temperature for 15 minutes before blending for a creamier texture.
- Chill the whipped feta for 30 minutes before serving for enhanced flavors.
- Store leftovers in an airtight container in the fridge for 3-4 days.
