As a busy mom, I know how challenging it can be to whip up a delicious meal that everyone will love. That’s why I’m excited to share my recipe for CREAMY TUSCAN KETO MEATBALLS.


Ingredients

Scale
  • 1 lb ground chicken or turkey
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the ground chicken or turkey, almond flour, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Form into meatballs.
  2. In a skillet, heat olive oil over medium heat and cook the meatballs until browned and cooked through. Remove and set aside.
  3. In the same skillet, add the heavy cream, sun-dried tomatoes, spinach, and Parmesan cheese. Cook until the spinach is wilted and the sauce thickens.
  4. Add the meatballs back to the skillet and simmer in the sauce for a few minutes.

Notes

  • For a spicier kick, add red pepper flakes to the sauce.
  • These meatballs can be served over zucchini noodles for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
