Description

As a busy mom, I know how precious time can be, especially when it comes to preparing meals. That’s why I absolutely adore this Creamy Spinach with Feta recipe. It’s not just quick and easy; it’s also a delightful way to sneak in some greens without any fuss.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, washed and chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup feta cheese, crumbled
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until the onion is translucent.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Add the chopped spinach to the skillet and cook, stirring frequently, until wilted, about 3-5 minutes.
  4. Reduce the heat to low and add the softened cream cheese, stirring until melted and well combined with the spinach.
  5. Fold in the crumbled feta cheese and nutmeg, mixing until everything is evenly incorporated. Season with salt and pepper to taste.
  6. Remove from heat and garnish with fresh parsley before serving.
