Ingredients

  • 6 bacon slices, cooked and crumbled
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté chopped green onions for 2-3 minutes until soft.
  2. Add well-washed spinach to the pot and cook for another 2-3 minutes until wilted.
  3. Remove from heat, let cool slightly, and blend the mixture until smooth.
  4. Return the blended soup to the pot, add chicken stock and heavy cream, stir well, and bring to a gentle boil. Simmer for 5 minutes, seasoning with salt, black pepper, and nutmeg if desired.
