- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1 cup canned artichoke hearts, drained and chopped
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick.
- Season both sides of the chicken breasts with salt and pepper.
- Spread a generous amount of the spinach and artichoke mixture onto each chicken breast, then carefully roll them up tightly, starting from one end.
- Secure each roll with toothpicks or kitchen twine to hold the filling inside.
- In a large oven-safe skillet, heat olive oil over medium heat. Add the chicken roll-ups and sear for 3-4 minutes on each side, until golden brown.
- If using breadcrumbs, sprinkle them over the top of the chicken roll-ups for added crunch.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Notes
- For a spicier version, add red pepper flakes to the filling.
- These roll-ups can be served with a side salad or pasta for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
