Description

As a busy mom, I know how challenging it can be to whip up a meal that pleases everyone. That’s where my Creamy Spinach Artichoke Chicken Roll-Ups come in! This dish is not only a quick solution for hectic weeknights, but it also impresses family and friends alike.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick.
  4. Season both sides of the chicken breasts with salt and pepper.
  5. Spread a generous amount of the spinach and artichoke mixture onto each chicken breast, then carefully roll them up tightly, starting from one end.
  6. Secure each roll with toothpicks or kitchen twine to hold the filling inside.
  7. In a large oven-safe skillet, heat olive oil over medium heat. Add the chicken roll-ups and sear for 3-4 minutes on each side, until golden brown.
  8. If using breadcrumbs, sprinkle them over the top of the chicken roll-ups for added crunch.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Notes

  • For a spicier version, add red pepper flakes to the filling.
  • These roll-ups can be served with a side salad or pasta for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
