- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup artichoke hearts, chopped (canned or jarred)
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1 1/2 cups shredded mozzarella cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes on each side until browned.
- In a bowl, mix cream cheese, sour cream, chopped spinach, artichoke hearts, and half of the shredded mozzarella until smooth.
- Place the seared chicken in a baking dish and spread the creamy mixture over the top. Sprinkle remaining mozzarella on top.
- Bake for 25-30 minutes until the chicken is cooked through and cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
- Make sure the chicken reaches an internal temperature of 165°F (75°C) for safe consumption.
- This dish pairs well with a side of rice or a fresh salad.
- You can use frozen spinach, just be sure to thaw and drain it before using.
