- 1 cup cherry tomatoes, halved
- 1/2 cup low-fat cream cheese
- 1/3 cup milk (or unsweetened almond milk)
- 1/4 cup pesto (store-bought or homemade)
- Salt and pepper to taste
- Fresh basil for garnish
- Lemon wedges for serving (optional)
Instructions
- Heat olive oil in a large non-stick skillet over medium-high heat.
- Season salmon fillets with salt and pepper on both sides.
- Sear salmon skin-side down (if applicable) for about 4-5 minutes, then flip and cook another 3-4 minutes or until golden and flaky. Remove and set aside.
