  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup low-fat cream cheese
  • 1/3 cup milk (or unsweetened almond milk)
  • 1/4 cup pesto (store-bought or homemade)
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Lemon wedges for serving (optional)

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat.
  2. Season salmon fillets with salt and pepper on both sides.
  3. Sear salmon skin-side down (if applicable) for about 4-5 minutes, then flip and cook another 3-4 minutes or until golden and flaky. Remove and set aside.
  4. In the same pan, reduce heat to medium and sauté garlic for 30 seconds.
