- 10 ounces penne pasta
- 1 and 1/2 pounds boneless skinless chicken breasts
- 3 tablespoons unsalted butter
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 cup sun-dried tomatoes
- 2 teaspoons minced garlic
- 3 tablespoons all-purpose flour
- 1 teaspoon paprika
- 2 teaspoons dried Italian seasoning
- Salt to taste
- Black pepper to taste
- Olive oil, for sautéing
- Fresh basil leaves (optional, for garnish)
- Additional grated parmesan cheese (optional, for garnish)
Instructions
- Boil penne in a large pot of salted water following package guidance. Drain and set aside.
- Season chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 6–8 minutes, or until fully cooked and golden. Transfer to a plate and keep warm.
- In the same skillet over medium heat, melt butter. Add minced garlic and sauté for 30 seconds. Stir in flour, whisking constantly to form a smooth roux.
- Slowly whisk in chicken broth followed by heavy cream and parmesan cheese until smooth and creamy.
- Add sun-dried tomatoes, paprika, dried Italian seasoning, salt, and black pepper. Let simmer, stirring frequently, until the sauce thickens.
- Return cooked chicken and penne pasta to the skillet. Toss all ingredients together until evenly coated with the sauce.
- Serve warm. Garnish with fresh basil and extra parmesan if desired.
Notes
- Feel free to adjust seasoning according to your taste.
- You can use grilled chicken instead of seared if preferred.
